The Portico Experience is a private, one-table-per-night culinary event in my backyard, under my screened portico. I like to call it a micro-restaurant, operating as I would an actual restaurant.
Here are some distinctions:
I have one table. It will seat 4-6 guests and they have the table the entire night. I don’t have to turn that table like I would in a formal restaurant. This means the guest is never in a hurry and the dining experience can be leisurely enjoyed as I intend it.
I get to fully engage my guests. I am your host, bartender, server and cook all in one. This kind of intimate contact is deeply personal and unheard of. But I became a chef not just because I loved to cook, but because I like connecting with the people for whom I cook.
I plan your entire night, start to finish. I tailor the menu according to any dietary restrictions you may have. Everything that comes to the table is aligned to that parameter. I also mow the yard, manicure the plants, chop the firewood for the pit, set the mood with candles and vintage outdoor Coleman camping lanterns, etc. I think through everything the guest will see, touch or smell. I want it to feel like a special occasion, not just dinner in some guy’s backyard.
Come prepared to stay at least four hours. Guests often stay longer. Taking an Uber or Lyft is always recommended,
